Cornbread Recipe(gluten free)

1 cup of corn meal
1/2 cup of soy meal
1/2 cup of brown rice flour or all-purpose gluten free flour
*** ALL Bob’s Red Mills flours and meals ***
1 egg
1 cup of milk(I use 1%)
2 tablespoons of brown sugar or agave nectar
1/2 tablespoon of unsalted butter
1/2 teaspoon of salt
1 teaspoon of baking soda
cooking spray

Preheat oven to 350°F. Spray pan and set aside. I use a pie pan.

Mix corn meal, soy flour, brown rice flour, salt, brown sugar and baking soda together. Add egg, milk and melted butter. Combine and mix, try not to overbeat. Pour into pan and bake for 25 to 30 minutes.
