Slow and Low Sweet Potatoes

I made Slow and Low sweet potatoes adapted from Cooks Illustrated and Kath Eats tonight for dinner with Bell and Evans and greens.

Slow and Low Sweet Potatoes

- 1 to 3 sweet potatoes
- 1-2 tbsp. of extra virgin olive oil
- salt and pepper to taste

Prehat over to 350F. While the oven is preheating, cut the sweet potatoes into thick slices, keeping the skin on. Cover in olive oil, salt and pepper. Place on cookie sheet or baking dish. Cook for 30 minutes at 350F. Then, turn the oven up to 400F and cook for 20-25 minutes. Enjoy!

Note: These sweet potatoes are soft, sweet, and taste like pillows of heaven. :)
