Morning Tacos

Morning workout with Jen this am, before cranking out the work all day long. We did circuits, just like Monday. My chest and shoulders had been sore from Mondays workout, so we concentrated more on back, butt and legs today.

I made “Morning Tacos” for a post workout breakfast.

2x egg whites
1 cup of arugula
3 tablespoons of salsa
2 tablespoon shredded sharp cheddar
1/4 of an avocado(diced)
1 tsp. of olive oil
2-3 soft corn tortillas(make sure they are gluten free- corn, lime and water only)

Whisk egg whites together. Then heat pan to medium high heat, add olive oil. Next cook egg whites to desired firmness. Heat corn tortillas in the microwave for 15-30 seconds until soft. Place tortilla on plate, place a little cheddar in each tortilla then add the egg whites. Place a small amount of salsa, avocado and arugula on each! Enjoy!
