A Flop

My day started off with maple nut granola  and a small banana at 6am! But by the time I got home two hours later  after teaching a 55 minute spin class, and walking  there and back( 2 miles)- I was STARVING!! So I had a ‘2nd breakfast’ scramble with a small sweet potato, scallions, red peppers, eggs and parsley. It was SOO good, and kept me going til 2 pm when I had some leftover chili at the hospital! I had a GREAT day at the hospital! I have a new duty this week, which is challenging but so interesting. I really love my time there! 

I then came home and took Luna for a 1 1/2 walk, and made myself a snack of white bean & cashew dip with apple slices.


For dinner I decided to make a polenta bake( layer 1:cooked polenta).


Layer 2: spinach, parsley and ricotta blended together with 2 cloves of garlic!


Layer 3: mozzarella


Layer 4: tomato sauce with Romano cheese on top!


I cooked the bake for 30 minutes at 350F!

It turned into a mushy pile! Ugh! It was not accepted by the crowd(Dave & Toby)…. so Thai Hut was called…P1311511

I got fresh rolls with tofu…. you win some you lose some! Smile
