Fudgey Flourless Brownies

I made these brownies for three kids yesterday, and they LOVED them! They are rich in fiber, chocolatey and delicious!

Fudgey Flourless Brownies(adapted from Whole Foods)

1 15 oz can of black beans, drained and rinsed
3 large eggs
1/3 cup melted butter
1/2 cup of sugar
1/4 cup Ghiradelli sweet ground chocolate OR a product like this
1 tbsp of strongly brewed coffee(they are fine without)
2 tsp. vanilla extract
3/4 cup semi-sweet chocolate chips

Preheat oven to 350°F.
Butter an 8-inch baking dish.
Place the black beans, melted butter, cocoa powder,eggs, sugar, and vanilla extract in a food processor or blender(both work) and blend until smooth.
Remove and gently stir in the chocolate chips.
Transfer to a baking dish.
Bake the brownies for 30 to 35 minutes, or until just set in the center.
Cool before cutting.
