Sunday= Chili

Our morning started off with some delicious french press coffee!

Then I ran off to train, worked on my dietetic internship applications, some school work, and the new site!

What better day than a Sunday to make chili …

In the ‘pot’ :
1 lbs of chicken( on sale for $2.99lb at Whole Foods!), diced
2 large cans of tomatoes
1 medium onion, diced
1 green pepper, diced
1 1/2 cups of frozen corn
1 medium sweet potato, diced
1 tbsp. cumin
1 tbsp. of chili powder
1 tbsp. of agave nectar
1 small can of adobo sauce

I cooked the chili on low for over 6 hours … it really blended the flavors…

On top of my chili-  I added cilantro which I can’t get enough of right now and Cabot cheddar.  Deliciouso!

Now, before I forget I wanted to post my workouts from last week:

Monday:
55 minute spin class(taught)
3 1/2 miles of walking

Tuesday:
Kettlebell workout(25 minutes)
4 miles of walking

Wednesday:
55 minutes spin class(taught)
4 miles of walking

Thursday:
30 minutes of shoveling
2 miles of walking

Friday:
4 miles of walking

Saturday:
55 minutes on the spin bike(home)
1 mile of walking

Sunday(today):
circuit workout(25 minutes)
1 mile of walking
