30th Birthday

Yesterday, was Toby’s 30th birthday! Since, he was away- we celebrated tonight! Smile 

But, I’m getting ahead of myself… there were Luna walks, lunch and cooking prior to our celebration.

For lunch: leftover ribollita with  brown rice & millet bread.


Then, I organized our dinner  menu:

  • chickpea/turkey burgers
  • parsnip & sweet potato fries
  • chocolate brownie cupcakes with chocolate buttercream frosting

I started with the  brownie cupcakes(adapted from Ghirardelli)… oh my they are delicious!


Preheat the oven to 350F. Melt the butter, and let cool slightly. In a bowl, mix the two eggs, vanilla, and sugar.  Then, add in the butter , slowly! In a separate bowl- add the flours, ground chocolate, baking powder, and salt. Add the dry ingredients into the wet ones. Once mixed, add the bittersweet chips. Then, separate the brownie dough into 12 cupcake cups(lined). Cook for 25-30 minutes until cooked through. Let cool for one hour. Frost with your favorite buttercream recipe! I called my friend Elise(The Buttercream Queen) for some help with mine!


The finished product… my piping wasn’t perfect BUT it’s the thought that counts! Winking smile 


Then, after two LONG Luna walks totaling 3 1/2 miles – I came home and made the chickpea/turkey burgers and ‘fries.’

In my new favorite burgers:

Chickpea/Turkey Burgers

  • 2 cups of chickpeas, drained and rinsed
  • 1 lbs. of 94% lean ground turkey
  • 1/3 cup of short grain brown rice
  • 1/4 cup of mint, minced
  • 1/4 cup of cilantro, minced
  • 2 cloves of garlic, minced
  • salt & pepper
  • 2 tsp. extra virgin olive oil(for cooking the burgers)

First, pulse the chickpeas & brown rice quickly in the food processor til chopped roughly. Then, add the chickpeas, ground turkey, mint, cilantro, garlic and salt and pepper in a bowl. Mix altogether with your hands. Form 8 burgers, and place on a plate. Place in the fridge for 30-60 minutes. In a nonstick fry pan on medium-high heat, ad d the oil and cook the burgers for 4-5 minutes on each side or until cooked through. 

I added Cabot on top for a little something special & with the sweet potato,parsnip fries it was perfect! P2162070P2162068

They boys came home…  there was singing, cupcakes & JEOPARDY! They  were all excited about watching the computer- WATSON!
