Cheesy Thursday

After a THIRD day of  group exercise classes(Total Body/Spin/Total Body) my legs are feeling the burn! Tomorrow, is going to be straight cardio- perhaps a run or time on the spin bike!

I think the walks to and from work are helping them though I feel like I’m walking with a slight limp… Winking smile

Before leaving for the hospital today, I made crockpot chili. I love the smell when I walk through the door at night.

In tonight’s pot:

  • 1 lbs. of 94% lean Plainville Farms turkey
  • 2x 28 oz cans of Muir Glen tomatoes
  • 1 cup of WF sweet corn
  • 1 red pepper, diced
  • 1 1/2 tbsp. of chili powder
  • 1 1/2 tbsp. of cumin
  • 1 tbsp. of agave nectar
  • 15 oz. can of black beans, drained and rinsed
  • 15 oz. can of cannellini beans, drained and rinsed
  • 1 medium sweet potato, diced
  • 1 medium yellow onion, diced

After having a wonderful afternoon at the hospital- I came home to a package from Cabot

They sent me their NEW  3/4 oz mini’s. They are SO many delicious flavors!

I quickly opened one of the 50% Reduced Fat Garlic & Herb mini’s to try. It was a perfect snack to have before walking Luna!

Then, it was CHILI time!!  At the bottom of my bowl, a corn muffin and on the top –Cabot & cilantro!
