Chicken Roaster

Whole chickens were on sale at Whole Foods on Friday for $1.29/lbs.- so I picked one up!

Tonight’s dinner:

  • chicken stuffed with a lemon(yes mother I am turning into you!), garlic & thyme
  • roasted parsnips, Yukon gold potatoes, and carrots
  • cornmeal crunch from 101 Cookbooks(I added bacon and extra parm after speaking to Elise)

How good does this look?

Roasted parsnips, carrots and yukon gold … prime roasted gold!


The chicken was so tender and cooked to perfection it just melted in my mouth. The roasted veggies were smooth, warm and inviting while the cornmeal crunch added an extra snap to the meal!  Don’t I sound like a food critic?


Tomorrow morning, I’m teaching Total Body Challenge- I plan to use some of the moves I learned at Equinox! Get ready everyone!
