Friday Dinner

The morning flew by- somewhere during that time  though- I got in 20 minutes on the elliptical, a couple walks with Luna, and some school work! Phew!

I finally had lunch at 2pm, and whipped up a quick panzanella.

This time I added:

  • Udi’s whole grain bread, toasted
  • parsley,minced
  • basil, minced
  • cherry tomatoes, diced
  • red & green peppers, diced
  • garlic, minced
  • 1 tbsp. of olive oil
  • 1 tsp. of honey mustard
  • 1tbsp. each of apple & balsamic vinegar
  • salt & pepper


I then got ready for our dinner guests!

For dessert:

Chocolate mousse made with ricotta and egg whites- it was a big hit!


Tomorrow morning, I’m off to Equinox to meet Sarah for a hardcore group ex class!
