JUST KIDDING!
I met Sarah, for a class at Equinox Back Bay this morning with her favorite instructor, George Dossas. We took his 9:30 class called Evolution. This class is 55 minutes of pure GO- from blurpies to lunges, pushups, jump squats and more he keeps your heart rate up the ENTIRE time! We were plum-tuckered out when we left, and Sarah says he took it easy on us!
I was famished afterwards so I had a banana and two pieces of leftover pizza for lunch!
Dave and I then took a trip out to see our friends – Jamie & Jay and their son Joey!
Dave loves their dog Chelsea- he calls her his ‘pocket pal.’
Joey was very excited to show us his toys… even his dad’s bat!
Then he showed us how he reads … ok ok- how he opens books
While, his dad worked on his train…
Though it was a quick trip, it was nice to see our friends! It had been WAY to long!!
We then went to Whole Foods to grab our groceries for the week. I picked up some Mesa Sunrise cereal to make cereal bars. This time I used only 1 tbsp. of butter, 4 cups of cereal, 1 1/2 cups of marshmallows, and 1/2 cup of 60% cacao bittersweet chips. Yum!
Tonight, I made butternut squash & cheese soup.
- 3 cups of butternut squash
- 1 cup of low sodium chicken broth
- Organic Valley Lactose Free 1% milk
- Cabot Reduced Fat cheddar
- 1/4 tsp. of nutmeg
Add first three ingredients into a stockpot and bring to a boil on medium-high heat. Let simmer on low for 30 minutes. Then blend, and add the cheddar and nutmeg. I toasted a piece of Udi’s whole grain bread and crumbled it on top! Warm and delicious!

Hi! I just found your blog. Your soup looks delicious! I enjoyed your About Me section too- I’m trying to reduce the gluten in my diet- just to see if it makes me feel any different. I saw in your last post that you used Udi’s- do you like it? I saw it at the store last week but wasn’t sure if I should get it!
Hi! Thank you so much! Four years ago I was diagnosed gluten intolerant and it has changed my diet completely. I do like Udi’s bread, but it isn’t very grainy and only has 1 gram of fiber per 2 slices of bread- bummer! I love Abigail’s Brown Rice & Millet bread and all of Bob Red Mills products- so check those out!
