Sunday Supper

Dave, Luna and I packed up and went down to Aunt Jane & Uncle Bobby’s for an old-fashioned afternoon supper!

The table filled up quickly with Ali & Jay, and Ben & Nyssa! When Aunt Jane invites us down for dinner we all come hungry!

We started with soup: Jane made ribollita soup for me, while the rest of our group had minestrone. Ribollita is an easy soup recipe that I will be making in the near future for sure!

On the  main menu :

  • chicken piccata( lemon and capers)
  • corn casserole
  • green beans
  • mashed potatoes

Aunt J then made a a crustless custard layer cake for me! Chocolate mousse, vanilla and coconut…  While the rest had cupcakes, custard pie, and Italian cookies.

After a wonderful afternoon at the Lo house, we drove home  stuffed and ready to watch the game!

Dave felt it was important to get his fish for his ‘man cave’ prior to the game starting- oh Dave!

Our game day plans were up in the air, but I decided to make some guacamole just to have some pre-game fun!

In the processor tonight:

  • 1 1/2 avocados
  • 1/2 cup of cilantro
  • 1/4 cup of red onion
  • 1 garlic clove
  • juice from one lime
  • 1/2 cup of cherry tomatoes
  • salt & pepper

Dave had asked for beef brisket nachos for his game day treat, but due to my time allotment (2 hours) – it was more like steak( free-range, of course) nachos. I was still full from afternoon supper so Dave ate almost the entire pan!

While ‘D’ had another bowl full of chips and guac after the steak nachos- I had a cereal bar, a great end to a great weekend!
