Today FLEW by- especially the morning- I went from Interval Challenge, to training clients, to school, to Trader Joe’s, to KALE SOUP! Phew! The soup was a perfect way to end a crazy morning!
I then got in the car and went over to cook with some lovely little ladies. I asked them to be ‘kid testers’ for mookies! They loved them! So what is a mookie?
Mookies = my new non-cookie treat
I love these little mounds! They have been kid tested and friend approved- so enjoy!
Ingredients:
- 1/3 cup of natural creamy peanut butter
- 3 egg whites
- 1/4 tsp. of baking powder
- 5x dates(seeded and chopped up)
- 1 cup of gf oats
- 1/3 cup of good dark chocolate OR chocolate chips
Preheat the oven to 350F. Place all ingredients in the food processor and pulse until you have a large mound of dough. Either use cooking spray or parchment paper and cover a cooking sheet. Place 1 tbsp. sized balls onto the cooking sheet(makes 15). Bake for 8-10 minutes.
After spending time with the ladies making pizza I came home to these two ‘naughty beasties.’
Luna’s puppy friend -Lenny had come over for a pup-date. As per usual, Lenny finds EVERY hidden ball in the house and ‘kills’ them while Luna stares him down and waits for him to move on to his next ‘ball victim.’ She is always plum tuckered by the end of the night!
While the pups played, Dave and I put together a quick dinner of turkey/chickpea/brown rice burgers with kale chips and parsnip fries.
A nutritious meal to finish the day and get us ready for tomorrow!

The mookies sound tasty and pretty easy to make.
I’ve yet to try parsnip fries. I love carrot fries, are they similar?

Ooooh – they are different than my mookies! Yes, are yours harder? Fabulous recipe though!…actually those burgers are catching my eye –
They are actually pretty soft from the peanut butter!
