Can you believe it- it snowed in Boston today!
To stay warm I made a kale soup!
In my soup pot today:
- 5 cups of water
- 1 cup of crushed tomatoes
- 1 can of drained, rinsed chickpeas
- 1 large bunch of kale
- 1 small onion, diced
- 1 tbsp. of extra virgin olive oil
- 1/2 vegetable bouillon
- 1 medium size sweet potato, peeled and diced
I sautéed the onion in olive oil for a 3 minutes and then added the rest of the ingredients. Then, brought the soup to a boil and let it simmer for 20 minutes. It is amazingly easy to make, delicious and nutritious. Makes 2 quarts.
In my lunch sack today:
- kale soup
- lemon Chobani
- 3/4 oz 50 % light Cabot
- pear
- mookies for my ladies(more on these tomorrow)
For dinner tonight, I soaked and cooked up Bob’s 13 beans and added tomatoes, onions, 1/2 poblano pepper, cilantro, sweet potatoes, red peppers, chili powder, cumin, agave nectar, and crazy Jane salt mix. Set the crockpot on low and let it sit ALL day(literally 8 hours).
It was beany delicious!
My workout today: 25 minutes on the elliptical! I still wasn’t feeling 100%. Tomorrow though- I’m going to Interval Challenge!

Mmm, I love anything with chickpeas and will have to give that kale soup a try. I had homemade tortilla soup yesterday – really hit the spot with that wacky snow!
