Fish Tacos

After a killer Interval Challenge class, two pt sessions,  time at the hospital, and sitting on a panel at school- I was ready to take a break and have some time in the kitchen. On the menu tonight: fish tacos!

  I made jerk seasoned tilapia with a red cabbage slaw(lime juice,  light safflower mayo, apple cider vinegar, agave nectar, and s & p). We also had black beans,cilantro, red pepper slices, and 50% light Cabot to add into the corn tortillas.

Early to bed for me- I’m going to the MDA(Massachusetts Dietetic Association) annual conference tomorrow!

I’ve never heard of safflower mayo. Can I get it at Whole Foods?
