Sunny Wednesday

What a gorgeous day- I’m so glad I got to enjoy it! I started the day by teaching a KILLER spin class- a fantastic workout!

Then, came home and made myself an egg white scramble with red pepper slices, baby spinach, a corn tortilla, and 50% light Cabot with sriracha and ketchup for dipping- yummo!

My buddy Nyssa then came over for walk with Luna and lunch. We decided on Sugar & Spice(it’s our go-to) after our fast 2+ mile walk.

We ordered the chicken noodle(rice) soup, massaman curry, and basil tofu. As per usual- it was all delicious and only $9/person!  We both decided it would be good to take a walk after lunch so we went back to myself and took Luna for a 1/2 mile loop around the neighborhood. The little one was plum tuckered out by 2pm.

I then drove over to the ‘little ladies’ house to do some cooking!  Before cooking- we made some tulips with modeling clay and decorated the yard!

After a great afternoon with ‘the ‘little ladies’ I came home to make dinner for Dave and I. He had also gone out to lunch so we decided kale soup would be a good light dinner! Though, I decided to make brown rice and millet garlic bread- SO good –  definitely made our dinner LESS light Winking smile

In our kale soup tonight:

  • kale( of course)
  • cannellini beans
  • large white sweet potato, diced
  • 6 cups of organic low sodium chicken broth
  • medium onion, diced
  • 1 tbsp. of extra virgin olive oil
  • large bunch of kale- stems removed, diced
  • small can of organic tomato sauce

I’m off to do some homework and read the Eldest!
