It was cold, but what a a blue sky we had ALL weekend long!
I got two great workouts in- one with Sarah at Equinox( George’s class) and the other with Carrie walking around Fresh Pond!
I also made some great food this weekend including a new black bean dip and edamame guacamole.
Black Bean & Cilantro Dip
- 1 cup of black beans, drained and rinsed
- 1/2 cup of cilantro
- 1 red pepper, sliced
- 1 small onion, diced
- 2 garlic cloves, diced
- 1/2 tsp. of cumin
- 1 tsp. of olive oil
Place the olive oil in a large pan on medium heat. Add the onions, red pepper and garlic and cook for about 4 minutes. Place the black beans, cilantro, cumin, and onion mixture in a food processor. Pulse until smooth! Enjoy!
Saturday night, Dave went up to NH to visit his buddy so I had leftover Thai chicken noodle(rice) soup and red curry with brown rice. We had gone Sugar & Spice for a lunch date! Oh I do love leftovers for dinner!
This morning I got up and had two pieces of Abigail’s brown rice and millet bread with homemade peanut butter and a banana. I can’t remember the last time I had toast for breakfast- it really hit the spot!
Then, after a trip to MB (Market Basket) I came home and make edamame guacamole (thanks for the idea Sarah!)
Edamame Guacamole
- 1 1/2 cups of cooked edamame beans
- 1/2 cup of salsa
- 2 cloves of garlic
- 1/2 cup of cilantro
- 1/4 tsp. of salt
Place all ingredients into a food processor and process until smooth. It really does taste like guacamole!
We had this plate of dips mid morning because we were both hungry after our walk with Luna.
For lunch I had a Bell & Evans gf patty over baby spinach with honey mustard and ketchup!
Afterwards, I met my friend Carrie for two loops around Fresh Pond = 4.5 miles! I think she could be a speed race walker- her feet move sooo fast! By this time, I was up to 6.5 miles of walking for the day, including 2 walks with Luna & Dave.

We picked up the peanuts from C’ville! Woo hoo!! I can’t wait to spend the afternoon/evening with them tomorrow!
Dave and I came home and made tilapia tacos for dinner. I can’t get enough of the red cabbage slaw over the jerk seasoned fish it is soo good! I added black bean dip, edamame guac, and Cabot into my corn tortillas! Oh my- what a meal!
After dinner, we took Luna on her final walk of the day which brought me to a total of 7 MILES for the day! Phew!
Time for a book & bed!
