Chicken in Peanut Sauce

I’ve been thinking about this dinner ALL day!

Chicken in Peanut Sauce with Brown Rice Pad Thai Noodles = YUMMINESS!!


  • 1 1/2 cups of low sodium organic chicken stock(you could use veggie stock)
  • 1/2 cup of creamy peanut butter
  • 1 tbsp. of sriracha
  • 1 tbsp. of ginger, minced
  • 2 cloves of garlic
  • 1 tbsp. of gf San-j sauce
  • large head of broccoli, broken into small pieces
  • red pepper, diced
  • bag of frozen organic peas and carrots
  • package of brown rice noodles, cooked
  • 1 1/2 lbs. of boneless skinless chicken, cubed
  • 1 tsp. of canola oil

Place the first six ingredients into a food processor and blend(peanut sauce).  Next, heat the oil on medium high heat and add the chicken for 4 minutes. Add 1/4 cup of the sauce into the pan and cook the chicken for 3 more minutes. Add the vegetables and and cook for 2 minutes. Add the rest of the sauce into the pan cook on low for 4-5 minutes. In a large bowl- add the noodles, chicken, vegetables and peanut sauce. Mix well. Makes 8 servings. Enjoy!

This looks excellent. My husband could probably eat peanut noodles which sriracha every day!
