Spring Quinoa

Oh my what a delicious meal Spring Quinoa is! I thought I would share the recipe with you all- as I promised!


  • 1 cup of low sodium veggie or chicken broth
  • 1 cup of water
  • 1 cup of quinoa
  • 1 medium onion , diced
  • 1 red pepper, diced
  • 2 garlic cloves, minced
  • 1/2- 3/4 cup of cilantro, minced
  • 15 oz. can of black beans ,rinsed and drained
  • 1 cup of yellow or white frozen corn
  • 2 tbsp. of grated lime zest
  • juice from two limes
  • 1 1/2 tbsp. of extra virgin olive oil
  • 1 tsp. of chili powder
  • salt and pepper to taste

Bring the water and broth to a boil in a medium saucepan with the quinoa. Lower to a simmer and cover for 15 minutes until the water has been absorbed. While the quinoa is cooking, sauté the onion, red pepper, garlic, and corn on medium heat for 5-7 minutes in 1 tsp. of olive oil. Let cool slightly. Whisk the lime zest and juice with the remaining olive oil  in a small bowl to make the dressing. Next, mix the cooked quinoa with the onions, red pepper, corn, and drained black beans. Then add the chili powder as well as the lime dressing. Mix well and add the cilantro. Season with salt and pepper to taste! Enjoy!
