Sweet Potato & Black Bean Fritter

    • 2 medium sweet potatoes, peeled and cut into cubes
    • 1/2 medium onion, diced
    • 1/2 green or red pepper, finely diced
    • garlic clove, minced
    • 15-ounce can black beans, drained & rinsed
    • 1 1/2 tsp. of chili powder
    • 1  1/2 tsp. of cumin
    • 1/2  tsp salt
    • juice from one lime
    • 1/2 cup of cilantro(optional)
    • 3/4 cup gluten free corn grits
    • 1/4 cup brown rice flour
    • 1/2 tsp. baking powder
    • 1 large egg
    • 2 tbsp. of canola oil

Preheat the oven to 425F. Cook the sweet potatoes in boiling water for 8-10 minutes. While the potatoes are cooking, take 1 tsp. of oil and sauté the onions and peppers for 4-6 minutes on medium heat. Drain the potatoes and add them into a food processor with the black beans, onions and peppers, garlic, cumin, cumin, and cilantro.  Pulse until the potatoes are slightly chunky but mixed into the beans well. In a large bowl add the corn grits, brown rice flour, baking powder, lime juice and egg and mix. Add the sweet potato mixture from the food processor into the bowl and mix well. Heat 1 tbsp. of oil in a skillet on medium heat. Make each fritter about 1/4 cup and cook for 2 minutes on each side(about 4-5 fritter fit in a large skillet). Use the rest of the oil to cook the second batch of fritters. Place all  of the fritters on a baking sheet and cook for 10 minutes until firm. Makes 12-14 fritters.

Note: I made a sauce that was 1/3 cup of light sour cream, juice of one lime, and sriracha for dipping the fritters in to.


The boys loved them, but we all decided they would be better with  sriracha mixed in!

Of course the fritters were not enough for the boys so I made turkey/chickpea burgers and baked kale chips along with roasted cauliflower and green peppers to go with them for dinner!


Dave and I then took a trip to City Sports to get some new sneakers!

The below might look good, but they’re toast- from walking to and from the gym, training, walking Luna, running, and taking classes- it’s worn these poor sneaks out!


Since they don’t make the Brooks Ravenna anymore Sad smile  I decided on the  new Adrenaline GTS 11 & with my buywithme coupon they were $60. I can’t wait to try them out tomorrow!

Note: Yes I know they are purple with blue laces but their ugliness charmed me and will definitely be a conversational starter anywhere I go!
