Light & Bleu Cheese

For our final walk this evening we did a loop through the American Academy of Arts & Sciences.

I couldn’t get enough of  bleu cheese today!

For brunch I made oat & flax pizza topped with parsley pesto, Bartlett pear slices, figs, and bleu cheese.


It was pure yumminess!


After a wonderful day with Julie at the hospital I came home in search of MORE bleu cheese.

I decided on a supreme green dinner: roasted kale & asparagus with sun dried tomatoes, toasted polenta bits & bleu cheese. It sounds weird, but it was really good!


In terms of workouts- I went to Total Body Challenge today and walked about 4 miles- but something has happened to my left knee. It feels really funky and I’m use to regular aching pain. It’s different this time, so I’m going to the physical therapist tomorrow to figure it out- hopefully I’ll be back in action by tomorrow afternoon.

I’m sorry to hear about your knee. Do you have a foam roller? I find that when my IT band is tight it can affect my knee so I try to foam roll my IT band when I feel knee pain. It really helps! Good luck at the PT!

The lasagna sure looks better than it sounded — you are unbelievable. How do you get all this cooking done?
