Mother’s Day Weekend

by Meg on May 8, 2011

Luna and I would like to wish you and yours a Happy Mother’s Day!

After  my mum got in yesterday we came home and grilled!

On the menu:

  • Chilean sea bass with lemon & parsley
  • grilled polenta rounds with tomato slices, fresh mozz, and arugula pesto
  • gluten free hummingbird cupcakes

The bass was cooked to perfection on our charcoal grill- thanks Dave!P5074118

But- the polenta rounds were o’ so tasty on this warm spring evening!

My plate of perfection Smile

The  gf hummingbird cupcakes hit the SPOT for dessert- I’ll share the recipe soon!

This morning, we had a Mother’s Day Breakfast for both our mothers(both Dave’s and mine). I’ll admit it – I was up at 6:30am baking scones … I just don’t know how those bakers do it – day in and day out!

I decided to make lemon scones since my mum loves lemon and use wheat flour! Everyone said they turned out really well Smile

I also cut up some delicious fruit and made an asparagus and gruyere quiche with an oat/brown rice  crust- a perfect Mother’s Day breakfast.

We ended our breakfast with a family walk around the neighborhood- what more could you ask for!

Sarah and I then took mum for a pedicure at Diva Nair Salon in Newton, and were off to the Burlington Mall next- to get my mother a dress for the wedding. We were very successful! Smile

We did get a bit hungry while shopping though- so Sarah brought us to -Blue Stove in Nordstrom’s.

We shared three small plates:

  • crusted polenta with arugula salad
  • seared wild mushrooms and grilled asparagus with lemon zest
  • cilantro lime chicken tacos

They were all perfectly cooked and fueled us for the rest of the afternoon.

Next- we were off to see my cousin Hilde! I love family! Red heart

Since, we were over near the new house- Dave and I ended up taking my mum to Sarah’s Café for dinner! No surprise here- I got a Greek salad with chicken!

It’s time to practice my presentation one more time and then go to bed!
