A Puppy, Snake & Two Dinners

by Meg on June 8, 2011

After our fantastic dance lesson last night at Fred Astaire Dance Studio we came home and had a delicious dinner of asparagus & sausage over pasta.

Sausage and Asparagus over Pasta

  • package of Tinkyada pasta, cooked
  • 1/2 bunch of asparagus
  • 1 package of Al Fresco chicken sausage
  • 1 tbsp. of extra virgin olive oil
  • 1 oz. of freshly grated parmesan

- Heat olive oil in a large sauté pan on medium heat, and add the sausage. Cook until slightly browned. Then, add the asparagus and cook until desired tenderness about 3- 5 minutes. Add the asparagus, sausage and pasta into a large bowl. Sprinkle the parmesan on the pasta and mix in. Add salt and pepper to taste.

Today was filled with a spin class in the early am, then a Pure Barre class mid-day. I’m definitely sore from my circuit workout yesterday and my knees are feeling a little stiff after two group ex classes today- Brad will NOT be happy!

Later in the day- Nyssa & Beccah  and I went on a search for a  fabric for the table card posters. We found a great one- woo hoo!

Out of nowhere it was became 5pm and the boys( Dave and his brother, Adam) were walking through the door. P6085418

For dinner tonight I made the boys- Black Beans & Sausage over Heritage Ancient Grains – get that fiber in boys!!

They gobbled it right up! Smile

After Adam left we took Luna &  squeeker snake for a walk. You can’t believe how many dogs came out to visit on our walk- they must have heard the squeeker and came running Smile Ha!

I love simple dinners with pasta, veggies and chicken sausage, like your first meal! Little Luna is adorable with that toy!

Love Luna’s face, she’s so serious about her snake!
