Everything on Greens

I was a walking zombie this morning! Luna was up at 4:30- ready to go- ugh!

I  was so tired I actually drove to the gym this morning(lazy!) so that I could get a heavy upper body lift in before training. I knew if I walked I would have bagged the lift and I really needed it.

After the gym- I stopped at Market Basket for some much needed fruits & veggies.

When I got home I warmed up a piece of  cheddar & turkey sausage strata (I had made for dinner last night) on greens. My eyes were definitely hungrier than my stomach- I only ate about 1/3 of this piece.

It does look pretty doesn’t it & it’s 100% gluten free!


The rest of my day was filled with wedding calls, and a trip to the dealership to get ready for my trip down to PA this Friday.

For dinner- I tried something new- black bean & quinoa burgers. I had seen a recipe over the weekend and thought I would play around with the idea.


Bean Bean & Quinoa Burgers

  • 15 oz. black beans, rinsed & drained
  • medium onion, diced
  • 1/2 red pepper, diced
  • 2 cloves of garlic
  • 1 1/2 cups of quinoa, cooked
  • 1 tsp. of chili powder
  • 1 tsp. of cumin powder
  • 1/4 cup of cornmeal
  • 1 tsp. of extra virgin olive oil

Preheat oven to 375F. Sauté onion, red pepper, and garlic in olive oil for 3-5 minutes on medium heat . Add spices and cook for 1 minute. Place black beans, and sautéed veggies into a food processor- pulse for 20 seconds. Add quinoa & bean mixture into a large bowl and mix. Add cornmeal and mix thoroughly. Place parchment on a baking sheet, and form 8 burgers onto the sheet. Bake for 20-25 minutes.
