For lunch – I made chicken tortilla soup with the leftover chicken, peppers and onions from our tacos last night.

It was SO easy- 2 cups of water, 1/2 vegan bouillon cube, 2 cups of Trader Joe’s tomato soup, 1 cup of black beans, 1/2 cup of frozen corn, 1/2 cup of chopped grilled chicken, and 1 cup of roasted red & green peppers. Bring the ingredients to a boil, and simmer for 25 minutes. At the 15 minute mark- add  2 tbsp. of masa harina (softened in 4 tbsp. of hot water).  Let the soup simmer for 10 more minutes. Enjoy with corn tortilla chips broken on top!


Afterwards, we spend some time with Baby Eliza & Hilds! Isn’t she precious!?!

When I got home there was a package at my front door from Amazon- my food/med interactions book. I can’t believe my dietetic internship starts next week!


By 5:30- I was starving so I decided to make grilled gf pizza for dinner. YUMMY!!


I was dreaming of these roasted sweet potatoes all day- I know I’m weird! Rosemary(farm fresh), brown sugar and olive oil= perfection! They were so good I nibbled on a couple while the pizza dough was rising- I couldn’t help myself!


While Dave got the grill fired up- I cooked the pizza dough for 7 minutes in the oven. This is a very important step in grilling gluten free pizza- so it won’t stick to the grill.

Dave then used our new pizza peel(thanks Elise) and tossed our delicious dinner on the grill- the smell wafted down our entire street.


Oh how the boy loves his grill!



My side: olive oil, parm, kale, roasted peppers, roasted sweet potatoes, and Cabot cheddar.

Dave’s side: tomato sauce, grilled buffalo chicken, and Cabot cheddar.

It was o’ so good…


After a delicious farm fresh dinner- we were given another round of vegetables from Plato’s Harvard by our wonderful neighbor Pam!


I can’t wait to dive into these tomorrow after my allergy testing!

Don’t worry, I definitely dream of roasting sweet potatoes frequently too!

Now that’s my kind of pizza! I’m one of the weird ones who actually prefers a veggie- (real veggies… not just the skimpy stuff the pizza chains give) packed pizza with a little bit of high quality flavorful cheese. And off the grill is the best for crispy crust ;-) Yum!
