Easy Macaroons

So, I had these unsweetened coconut flakes in my cabinet that I just HAD to use Winking smile

Macaroons seemed like a more than appropriate use for the flakes!

Easy Macaroons

  • 3 cups of coconut flakes
  • 3/4 cup sugar
  • 3 medium egg, whites
  • 1/8 tsp. of salt
  • 1 tsp. of vanilla
  •  

    Preheat oven to 325F. Combine all the ingredients in a bowl and mix. Refrigerate for 30-45 minutes.

    Cover one cookie sheet with parchment paper. Then place about 10 flaked mounds onto the cookie sheet.  Bake for 25-30 minutes until golden brown. Cook the second batch.  Let the cookies cool on the cookie sheet for about 10 minutes then enjoy!
