When I got home from the hospital- I was STARVING! Dave was out on a walk with Luna so I quickly got started on dinner.
I was worried about his initial tempeh comments so I wanted to get it in the pan before he got home!
Monday Stir-fry
- 1/2 red pepper, sliced
- onion, thinly sliced
- 2 cups of green beans
- 3 carrots, thinly sliced
- one package of tempeh, cut into one inch cubes
- 2 tbsp. of gluten free soy sauce
- 2 garlic cloves, minced
- 2 tbsp. of candied ginger, minced
- 1 tbsp. of canola oil
- 1/4 cup noodle water(water from cooking the noodles)
- one package of Annie Chun brown rice noodles, cooked
Cook the onions & tempeh first until the tempeh is golden brown. Add the other vegetables, garlic, ginger and soy sauce- cook for 3-5 minutes on medium heat. Add the noodle water and the noodles. Mix and enjoy instantly!
Dave liked it- but didn’t want to know what tempeh was!
After this power dinner- I took a walk with Dave and Luna and then did a quick strength workout!

- shoulder press-12x
- reverse lunges- 20x
- skull crushers- 12x
- upright row-12x
- plank- 15 seconds
It ended with the foam roller!
