What could be better than nachos for breakfast!?!
I decided our second morning in Maine would be a perfect place to enjoy this delicious breakfast treat!
Breakfast Nachos
- 3 servings of your favorite tortilla chips( I used TJs new sweet potato tortilla chips)
- 1/2 cup of light cheddar cheese
- 1/2-3/4 cup of black beans, rinsed & drained
- 2 eggs & 3 egg whites, scrambled
- 2 –4 tbsp. of salsa
On a large plate spread the chips out in one layer. Sprinkle the beans all over the chips, and then add the cheese on top. Heat the plate on high for 40-60 seconds in the microwave until the cheese has melted. Cover the cheesy chips with warm scrambled eggs and salsa dolloped on top. Enjoy! Serving Size: 3.

Meg – this looks so good, I might just have to break my long-standing breakfast tradition of cereal/fruit/nuts and give this a try!
