Sunday was my last day of fruits & vegetables for awhile so I tried to make the most of it at every meal I have to go on a low residue(aka. low fiber) diet this week[more on this later].
For breakfast Dave and I shared gluten free apple crisp(made by Aunt Jane) – YUM!
After a family walk, and a trip to see Baby Eliza I came home and made a Nicoise salad for lunch!
Then it off to Charles to watch the boats go by…. I can’t wait for the Head of the Charles!
Brita came over for dinner.
Our menu:
- butternut squash mac & cheese
- garlicky green beans
- broccoli slaw
Does it look gluten free- because it is!!
My last meal of vegetables for the week- I had to live it up!
Starting on Monday- I am on a low residue(low fiber) diet to get my ready for my colonoscopy & endoscopy on Thursday!
- Monday & Tuesday: low residue, low fiber diet( the directions actually say WHITE bread- yikes!)
- Wednesday: clear liquid diet( broth, jell-o, gatorade, etc)
- Thursday(7:30am): BIDMC Celiac Center for my exams & liquids afterwards.
- Friday: back to normal
