Poached Eggs & Dessert Hummus

The diagnose is sinking in and so are these pills down my intestinal tract- ha! I am so blessed to have so many wonderful people in my life. Thank you all for the emails, comments, and calls in the last day!

Now on to the food… I tried two new recipes tonight! But I’m only posting one since the second one still needs some work!

I was looking for healthy snacks today online for a presentation I’m doing on Friday when I came upon ‘Cookie Dough Hummus’ (adapted from papillon).

Cookie Dough Hummus

  • 15 oz can of chickpeas, drained and rinsed
  • 1/2 cup of brown sugar
  • 1/3 cup of soy milk
  • 1/4 cup of peanut butter( smooth)
  • 1 tsp. of vanilla extract
  • 1/4 tsp. of salt
  • 1/2 cup of chocolate chips

Put the chickpeas, brown sugar, soy milk, peanut butter and vanilla extract into the food processor. Process until smooth. Remove ‘cookie dough’ from the food processor and add in the chocolate chips. Enjoy with apple slices.

Dave is still not feeling well so I stopped by Whole Foods to pick him up some chicken and rice soup & saltines!

Since I was all alone for dinner I made a smorgasbord of vegetables into a pancake. I added about 1/2 cup of roasted potatoes, 1/2 red pepper, 1/2 cup of kale, 1/2 cup of Udi’s bread( toasted and processed into breadcrumbs), 1 egg, and 1/4 cup of parsley into the food processor until it was the consistency of coarse meal.  I added about 1/2 tbsp. of olive oil into a fry pan and added formed patties into the pan and cooked it on medium-high heat for about 3 minutes on each side.

I added a poached egg on top of my veggie pancakes and fell in love! I might make Dave try this one when he gets better Winking smile

Hope you’re feeling well in light of your recent diagnosis. At least you know how to move forward, right?! I’ve heard of cookie dough hummus before but never tried it… the poached egg on top of EVERYTHING is something I know a lot about, however!
