It’s been a weekend filled with orange colored veggies at our house! Dave was still not feeling well so I was left on my own for most of my weekend meals- tehehehe!
On Saturday I made mini burritos filled with roasted sweet potatoes, black beans pureed with cilantro, onions and garlic, 50% light cabot, and roasted tofu covered in chili powder and cumin!
I ran out of corn tortilla and had to use a couple brown rice tortilla halves I had in the freezer-Whoops! It’s all the filling though
I then smothered the suckers with a homemade mole sauce. Oh, how I love mole! I took a small can of chipotle sauce and blended it with 1/2 cup of tomatoes, and 1/4 cup of cocoa powder- it turned out delicious!
A perfect hearty meal on a crazy weather weekend!!
My second orange vegetable recipe was Pumpkin Stuffed with Everything Good(adapted from Dorie Greenspan).
I started with a small pumpkin which I cut a top into and then scooped out.
I then stuffed the little sucker(apparently, I like this work in this post!) with gruyere, cabot cheddar, Udi’s bread, poultry seasoning, apple slices, 2 cloves of garlic, and a 1/4 cup of light cream with nutmeg.
The smell wafting to the second floor was unbelievable- I wish I could bottle it up and share it with you all!
Pumpkin Stuffed with Goodness Round 2 was even better and made in the afternoon to bring over to Bec & Bry’s house for appetizers before our dinner out at Ten Tables.

I must try this, seriously. Between the one Serena @ Teaspoon did for ReDux and now this… I’m so intrigued!
