Last night’s wine and laughter definitely caught up to me today. We were ALL moving slow today but still had a wonderful time hanging out together. Kristen and I even rallied enough to go to TjMaxx.
After a quick puppy walk with Nys & Ben, a stop by by Toby , Sarah and Evelyn- we helped K & P pack up and dropped them off at the airport I always hate(I mean dislike) to see them go!
We came home and I decided to take making mmm sauce. I needed some time in the kitchen. For me it is soothing like taking a bath or relaxing with a good book….
Also, all my blogger buddies seem have been making this sauce keep and I just had to try it out!
mmm sauce (recipe by Peas & Thank You)
- 1/4 cup canola oil
- 1/4 cup almonds
- 1/3 cup water
- 1/4 cup chickpeas, drained and rinsed
- 1/4 cup nutritional yeast
- 2 1/2 tbsp. lemon juice
- 1 tsp. minced garlic
- 1/4 tsp. salt
- 3/4 tsp. curry powder
- 1/2 tsp. dried oregano
- 1/2 tsp. dried cilantro
In a high speed blender or food processor, combine oil, almonds, water and chickpeas. Blend until relatively smooth.Add remaining ingredients and blend until smooth.
I made double the recipe since I had a lemon and chickpeas to use up! With kale chips this was a perfect post party dinner!
I’ve got a whole jar of this delicious sauce to have with lunches or dinners all week
I recommend whipping up a batch and trying it out- it’s nutritious and delicious!
