Camped Out All Day

This is where I was camped out all day- with a latte  & my Krause textbook! My clinical nutrition assignment has taken me all week to complete, at 21 pages with references I feel like I am almost done.  Hopefully, it will make me smarter for  my Clinical 1 rotation Winking smile

While I worked – Luna hung out underneath me on our new kitchen rug.

Carrie & Brita came over later this afternoon for a tutorial on how to make a roaster chicken!

After we put the bird into the oven, the three of us did a large loop around Cambridge.P1089632

Just in case you also want help making a roaster chicken …

Roaster Chicken

  • whole chicken(4-5 lbs)
  • 2 tbsp. of extra virgin olive oil
  • 1 tbsp. of poultry seasoning
  • lemon, halved
  • salt and pepper
  • 2 cups chicken stock

Preheat oven to 375°F. Rub the chicken with oil, poultry seasoning, lemon juice,  and salt & pepper. Place lemon halves in the cavity of the chicken. Set the bird in a roasting pan, breast-side down. Roast the chicken for 25 minutes. Then, turn the breast-side up and continue roasting, basting occasionally with pan juices, or chicken stock until a thermometer inserted registers   180°F. This will take about an one and half hours. Let rest for 10 minutes. Enjoy!
