Slow Cooker Lasagna

Slow-Cooker Lasagna (adapted from Marcia’s recipe)

  • 16 oz. container low fat cottage cheese, blended in food processor
  • 6 cups of baby spinach
  • 2 jars of gluten free & low sugar tomato sauce
  • 2 packages of Tinkyada lasagna or fettuccini noodles
  • 2 tbsp. of parmesan cheese
  • 1 cup of part-skim mozzarella
  • 1 lbs. of ground turkey, cooked


Mix the tomato sauce with ground turkey minus 3/4 cups. Spread that last 3/4 cup on the bottom of the crockpot. Add a layer of noodles,overlapping them slightly and breaking into pieces to cover as much of the sauce as possible Next add 3 cups of spinach, and one tbsp. of parmesan. Spread half of the blended cottage cheese on top of the spinach. Add a layer of the ground turkey and sauce mixture. Arrange noodles over the sauce. Repeat the layering one more time,  starting with the spinach and top of with 1/2 cup of mozzarella.  Top with a third layer of noodles. Evenly spread the remaining tomato/turkey sauce over the noodles and the remaining 1/2 cup of mozzarella.

Put the lid on the slow cooker and cook on low for 4-6 hours or 2-3 hours on high.

It SMELLED so good when I got home!

Wow, I need this in my life! Did you use no-boil noodles? Or cook them in advance?
