Ready for the Week

This afternoon I took some time to get ready for my week- food wise.

I cooked a tofu massaman curry, black rice, lentils, and roasted vegetables.


The lentils I’ll have with roasted vegetables (white sweet potato, parsnip, butternut squash and red pepper) and greens this week for lunch.

I’ll use the black rice for the massaman curry for dinner or lunch if I get bored with lentils and veggies. P3180789

It’s so nice to have time on the weekend to get organized.
