It’s April and time for another Recipe ReDux! This month’s theme: The First Shoots of Spring.
We’re not talking crocus and tulips but rather the first edible plants that are popping up in your garden and at local farmers’ markets. Leeks, scallions, garlic scapes, pea shoots and ramps may seem humble but they can pack a vibrant flavor and nutrition punch to just about any dish.
Instantly, I thought of pea shoots locally grown in Massachusetts. I had my first salad with pea shoots at Lineage in Brookline and instantly fell in love. The crispy color and fresh flavor makes me happy down to my toes.
Pea Shoots Salad
- 4 cups pea shoots
- 1/2 cup toasted pecans, chopped roughly
- pear, cut into thin slices
- 2 1oz. gf bleu cheese, crumbled
- balsamic lemon vinaigrette[see recipe below]
Lightly place the pea shoots in a medium size salad bowl or platter. Sprinkle chopped pecans and pear slices on top. Then crumble bleu cheese all over. Drizzle vinaigrette on top (I think less is more for this recipe!).
Lemon Balsamic Vinaigrette
- 2 tbsp. honey mustard (I love the 365 brand!)
- 1 tbsp. fresh lemon zest
- 2 tbsp. fresh lemon juice
- 3 tbsp. balsamic vinegar
- 1/4 cup olive oil
- salt & pepper, to taste
Whisk together the honey mustard, lemon zest & juice, balsamic vinegar. Taste and flavor with salt and pepper (I only use a tiny sprinkle of salt and pepper). Then slowly whisk in the olive oil!
This recipe is so simple and elegant for spring!

Looks delish! I made a pea shoot salad, too….yours looks awesome! I should have thrown some nuts in mine, but I used avocado instead. YUM!
I haven’t tried pea shoots, but this salad looks lovely so now it’s on my list of things to make!

WOW! Never saw pea shoots here where i live…will have to open my mouth at the market and find out where they are hiding! Nuts in salads are so yummy. Can I do this salad with hard goat cheese instead of blue cheese? We (I) find blue cheese a bit too strong for my taste, even though it is a cheese that most adore. Thanks for this recipe, inspiring.
First off- you photography is beautiful: really gets me in the mood for Spring! Second- I’ve never tried a pea shoot but now I have a mission to find them at the market. I want to try that lemon vinaigrette too.
This is so simple yet so so pretty and I’m sure delicious. Will be making once I get my hands on some pea shoots.
