After taking Luna for a walk, going for a run AND a quick home circuit I got started on dinner. Since Dave was out, I made carrot coconut soup!
Carrot Coconut Soup
- 1 tsp. unsalted butter or olive oil
- medium yellow onion, diced
- 6 organic carrots, diced
- 1/2 tsp. powdered ginger
- 1/2 tsp. cinnamon
- 1 tsp. chili powder
- 1 can lite coconut milk
- 1/2 cup soy milk
- salt
Heat saucepan on medium heat and add the olive oil. Sauté onion for 2-3 minutes. Add spices: ginger, cinnamon and chili powder and carrots. Stir and cook for 2 minutes. Stir in soy milk and coconut milk. Bring mixture to a boil and simmer for 20 minutes or until the carrots are soft. Turn the stove off and let cool for 2 minutes. Puree with an immersion blender or food processor. Add salt to taste.
Luna LOVES carrots! She really wanted one to nibble on- perhaps she’s really a bunny!
I love this soup- it’s becomes wonderfully smooth with coconut milk and is sweetened to perfection with cooked carrots!
Dave got home from his Reach the Beach meeting and and took Luna out for another evening walk!I had to get a picture of her towel off- what a silly pup!
Update on elimination diet: It seems to be working. I am having less gi issues, and am definitely less fatigued. I hope this keeps up!
