Pumpkin Chocolate Chip Cupcakes

It has been awhile since I had make cupcakes with applesauce and decided it was time to give it another try!

  • 1 box Betty Crocker gf vanilla cake mix
  • 1 cup pumpkin puree
  • 1/2 cup applesauce
  • 1 tbsp. canola oil
  • 3 eggs
  • 1 1/2 tsp. pumpkin pie spice
  • 2 tsp. vanilla extract
  • 5 chocolate chips(each muffin)

Heat oven to 350°F. Place paper baking cups in each of 12 regular-size muffin cups. In large bowl, combine all ingredients down to vanilla extract  until dry ingredients are moistened. Spoon batter evenly into muffin cups. Place five chocolate chips into each muffin tin, mix slightly. Bake for 19 to 24 minutes.

On Tuesdays, I spend time with two little ladies who love to try out my new creations including these pumpkin cupcakes.


They gobbled them right!
