Weekly Winter Meals

We’ve had two wonderful meals the past two days- even with my busy schedule. Monday, I worked a full day at the hospital and today I had training in the morning and then cooking with the ladies in the afternoon. It’s all about planning- or at least that’s how I get it done at our house! Winking smile

I found a recipe on the Foodess for Biscuit Chicken Pot Pie and modified it to include more vegetables, less fat, and gf biscuits.

Dave gave it a 9.23 on the Dave Rating Scale of 1(low) to 10(high) – pretty high for a weekday meal!

Last night, before I went to bed I put together the base of our turkey chili with ground turkey, strained tomatoes, shredded zucchini, cocoa powder, sweet potatoes, onions, cumin, chili powder, and garlic. Then, this morning I added another carton of strained tomatoes, cannellini beans and black beans.

By the time I got home, Dave and Brita had put out tortilla chips, cheddar, avocado and nonfat greek yogurt! Voila!

It was perfectly warm and inviting on this very chilly night!

Dave, Brita and are off to watch this week’s Downton Abbey- I can’t wait to see what happened this week!
