Dave brought flowers home tonight to celebrate my new job (more on this in the next couple weeks)! But, instead of one of my delicious dinners, all I could fathom having was yogurt and cereal for dinner- nothing else sounded good! Dave decided to make himself an egg sandwich, while I had a mixture of Mesa Sunrise and Erewhon Buckwheat and Hemp over 2% fage yogurt. It’s not too exciting but it sure tasted good.
While we had dinner I had chickpea blondies in the oven. I wanted to make a Friday treat for my co-worker at the hospital!
Chocolate-Chip Chickpea Blondies
- 1 1/2 cups chickpeas (1 can, drained and rinsed)
- 3/4 tsp. baking powder
- 1/8 tsp. baking soda
- 1/2 tsp. of salt
- 1 egg
- 3/4 cup brown sugar
- 2 tsp. gf vanilla extract
- 1/2 cup gluten free rolled oats
- 1/4 cup smooth peanut butter
- 1/2 cup chocolate chips
Preheat oven to 350 degrees. Blend all ingredients (except chips) until very smooth in a food processor (not a blender). Mix in chips, and scoop into a greased (or tinfoil-lined) 8×8 pan. Bake for around 25-30 minutes. They’ll look a little undercooked when you take them out, but they firm up as they cool.
They turned out really really well- even Dave needed a little nibble! Make them this weekend – you will not be disappointed!
