After joining Luna & Dave on a walk in the SNOW this morning, I came home and made myself a short stack for breakfast. Normally, I am NOT a fan of pancakes but for some reason I LOVE this recipe- it might be the cottage cheese!
Oatmeal Cottage Cheese Pancakes
- 2 eggs
- 1 egg white
- 1 cup low-fat cottage cheese
- 3/4 cup old-fashioned gluten free oats
- 1 tablespoon pumpkin butter
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons of soy milk
Directions
- In a food processor or blender, blend all ingredients until smooth. Add more milk, if needed.
- Heat a large non-stick skillet over medium-low heat. Spray with cooking spray. For each pancake pour a little over a 1/4 cup of batter onto griddle. Flip when they start to bubble. Cook until golden brown and cooked through. Repeat with remaining batches, spraying the griddle as needed. Makes 8 pancakes.
They kept me and the little one going all morning long!
