Dip Heaven

We have had a busy week filled with working, taking baby classes( so funny to say), and working on our house. Sorry, for the delay in writing posts, but truthfully I can’t even remember what I cooked last week for dinner.

On Saturday, we went over to Elise and Stefan’s for a Yankee swap. I decided to make my Aunt Bean’s greek layer dip – it’s such a tasty addition to any party.

Aunt Bean’s Greek Layer Dip

  • hummus(I used my own recipe)
  • 1 cup of non-fat greek yogurt combined with 1/4 cup of thinly sliced cucumbers, 1/4 cup of sheep’s milk feta, 1 tbsp. of dill, 1 tsp. of garlic, 1/2 tsp. of salt, and 2 tsp. of olive oil
  • one yellow and one red pepper, minced
  • small jar of kalamata olives, chopped
  • 1/4 cup of fresh chives

Layer the dip as followed: hummus, yogurt dip, yellow and red pepper slices, olives, and fresh chives. Refrigerate until ready to serve. I  used sweet potato chips, carrots and cucumbers for dipping.

This dip is my new favorite- I think this might need to be staple every weekend from now on!
